Sobequeras… the big ones

One of the more iconic Sonoran style tortillas is the sobequera or the tortilla de agua (water tortillas). Traditionally made with a soft, elastic style of Sonoran flour, water and salt... no fat. They are hand-stretched paper thin to incredible diameters. Upwards of two feet across. These tortillas are used to make "burros"... there is no diminutive "ito" when using a tortilla of this size! In Spanish, sobequera is slang for armpit as these tortillas go from your hand all the way to your armpit. Some folks don't appreciate the armpit reference as the connotation is less than savory and maybe even derogatory, but the name has stuck. Below is a 40 second video of a sobequera being born.
