Let’s talk Mexican cheese in Lander

Whaddaya know about Mexican Cheeses? Lander doesn't have a ton of variety, but Mr. D's and Safeway carry the Cacique brand of commercial Mexican-style cheeses. So what are the differences? Broadly speaking, there are fresh cheeses, flavorful cheeses, and melting cheeses. Below are some examples of each and how to use them:

Fresh:
-Queso Fresco made from fresh cows milk and aged for just a few days. Similar to feta, it is mild, crumbly, moist, and a bit salty. Perfect for balancing the spice of traditional Mexican dishes. It will soften, but not melt. Great for topping beans or chile colorado or stuffing enchiladas.

Flavorful:
-Cotija is named after the town of the same name in the highlands of Michoacan, MX where it originated. It has a robust flavor and a dry, salty texture most similar to parmesan cheese. It will not melt, but adds a wonderful tang as a topper for beans, tacos and soups. Combine cotija cheese, chili powder and lemon zest to take your tacos or grilled corn to the next level.

Melting:
-Oaxaca cheese is the string cheese of Mexico. Long ropes wound into balls have an earthy, buttery flavor that has a superior melt and is equally good cut into 1" inch chunks as a simple snack.

-Asadero is mild with pleasant acidity and a silky smooth texture. It originates from Northern Mexico, and is the "go to" cheese for creamy quesadillas and burritos. Also excellent for baking on top of enchiladas.
