The Taco that tastes you back… Tacos de Lengua

Last week I shared a Chorizo recipe because some might shy away from the weird bits in commercial Chorizo. This week, I'm going full weird bits mode and sharing a photo collage and recipe from the most recent Taco Tuesday at our house. It's the taco that tastes you back... Tacos de Lengua.

You can find beef tongue more often than you might guess at Mr. D's here in Lander, WY. And it's easier to prepare than you might think. It's also super tender (think shredded beef) and rich in flavor. Any taco truck serving lengua is legit. I just had to give it a go.

After washing the tongue, cover it with water, a couple quartered onions, 6-7 bay leaves, 4-5 garlic cloves, a tablespoon of peppercorns, and a tablespoon of salt bring to a boil and simmer for 3 hours. Let it cool a bit and then peel off the outer skin layer of the tongue. Cut off the darker, rougher base of the tongue (it's the part of the tongue that anchors it in the mouth). You can chop and eat it, but some prefer just the tongue muscle itself. Chop the tongue into small cubes (traditional) or finer for more nervous eaters. Fry it up a bit in a pan and keep it moist with some of the cooking broth. That's it... warm your tortillas, add some tongue, onion and cilantro, some salsa, garnish with radish and enjoy.
