Sonoran Style Tortillas

There are as many different kinds and sizes of tortillas as there are meats and chiles and cheeses to put inside them.

Tortillas del Chico Blanco is making a traditional Sonoran style tortilla popular throughout the northern Mexican states of Baja California (Norte and Sur), Sonora, Chihuahua, and Coahulia as well as the borderlands of Texas and Arizona.

The Sonoran tortilla is unique in that is has no leavening and is rolled or pressed paper-thin (they really are translucent!). New Mexico is known for leavened and thicker/puffier tortillas that are ideal for sopping up hatch chili stews and soups. But Sonoran style tortillas are the tortilla of choice for burritos, quesadillas, carne asada tacos, chorizo and eggs plus many other recipes tied to the ranching and vaquero culture of Mexico's El Norte.
